Bánh đập – Battered rice paper

Stir-fried baby basket clams are a favorite dish of diners in Hoi An Ancient Town. The plate consists of two things: battered rice paper and stir-fried baby basket clams. Bánh Đập comprises two layers of baked rice paper sandwiched with a layer of wet cake in the middle. When eating Bánh Đập, you will feel the crispy taste of the baked rice paper layer and the suppleness of the warm damp cake. Rich, spicy, and spicy stir-fried mussels served with Bánh Đập perfectly combined.

Baby basket clams are sautéed to retain their sweetness. The chef will put some cooking oil in the pan, pour the clams in and then add a little seasoning. Then, they will add peanuts, fried onions, satay, a little sesame, and laksa leaves. Finally, pour into a small plate and serve with crackers.

Fish sauce seasoning (Mắm Cái) and spicy chili sauce are must-haves when eating Bánh Đập and stir-fried baby basket clams. The fish sauce is mixed with a bit of sugar, minced pineapple, a little oil-free onion, garlic, and green chili peppers typical of Quang Nam – this type of chili, when crushed into the fish sauce, gives off a characteristic aroma. Like that, there was a perfect cup of dipping sauce. The cup of dipping sauce is just that simple but surprisingly delicious.
